1 cup sugar1 cup fresh lime juice, from 8-10 limes
1 liter seltzer water or club soda
In a small saucepan, combine 1 cup water and sugar. cook, stirring over medium heat until is dissolved and mixture is clear, 2-3 minutes. Transfer to a pitcher and cool.
To serve, stir together sugar-water mixture, lime juice and seltzer water. Pour over ice and garnish with zest or lime slices.
Rookie's Notes: If you think I am going to hand-juice 10 limes, you are bonkers. From my wedding, I have a little dinky automatic juicer. I have seen them at Wal-Mart for like $10.
