Watermelon is the patron saint of summer food. I think we are on our 7th watermelon of the summer so far. We almost always have a bowl of the sweet red stuff on our counter or in the fridge. There is something so perfectly wonderful about cold watermelon.Watermelon always reminds me of my sister Caitlyn. Caitlyn and I are 16 months apart, so naturally most of my growing-up memories include her. Caitlyn was always (and still is) up for a good time. I remember she would hold in her pee for hours because she never wanted to stop playing. She is probably still the same today:)
When we were younger, watermelon was one of Caitlyn's favorite foods. When my mom would cut one up, we would have a contest to see who could eat the most slices. Caitlyn always won. She is actually coming to my house next weekend. Caitlyn, want to have a watermelon eating contest when you come? I will smoke you. Or Jack will. He loves the stuff.

1 cup cubed watermelon
2 nectarines, pitted and cut into chunks
1 cup hulled and quartered strawberries
Zest of 1/2 lime
1 lime, juiced
3 Tbsp honey
Pinch of salt
In a small bowl, combine zest, lime juice, honey and salt. Whisk until combined.
In a medium bowl, combine the watermelon, nectarines and strawberries. Drizzle syrup over the fruit. Stir well.
Serve chilled for best taste.
Yields 2 servings.
