Cornbread

As I am typing this up, I am listening to Warren G "I Want It All" (I am more gangster than you think) and eating Nutella with a spoon. So I'm thinking, "Does Warren G like cornbread? What does he like to put on it?" I will bet he likes Nutella on it.



4 Tbsp butter
1 1/2 cups cornmeal
1/2 cup flour
1 1/2 tsp baking powder
1 tsp salt
1/2 cup sugar
2 eggs
1 1/4 cups milk

Set oven to 375 degrees. Put butter in an 8-inch square baking pan. Place pan in oven to melt the butter

In a medium bowl, combine cornmeal, flour, baking powder, salt and sugar. Whisk to combine. In another medium bowl, combine eggs and milk and whisk well. Pour eggs and milk into the dry ingredients and whisk to combine.

When the butter is melted in the pan and the oven is hot, remove pan from oven and pour the batter into it. Return pan to oven. Bake about 30 minutes, until top is lightly browned and sides have pulled away from pan. Serve warm.

Rookie's Notes: I like cornbread with honey on it, like in the picture. Mmmmmm.

Awww man, it's too bad I didn't discover your blog and all of the yummy goodness found within it earlier in the week. I'm 100% positive this cornbread is a million times more delicious than the Jiffy brand mix I used on Wednesday. (then again, I have a tendency to ruin everything I touch in the kitchen, so maybe it is for the best...)
