Thinking back to various posts I've read from her blog a recent one stood out. Whitney had attempted to make but wasn't successful. Whitney says "she HATES screwing up on food". Hates it like she does Satan, and that when she does, she doesn't ever want to touch that recipe again. She was thinking of giving up on ice cream!
! Well, I couldn't let that happen. If I can make ice cream I know she can!
While this isn't a it is a super simple one and a good place to start . It also comes by way of Lindsey, who Whitney refers to as Utah's resident ice cream whisperer. Like Whitney, I emailed Lindsey requesting an ice cream recipe, but for me it was a coconut one. Out of all the ice cream recipes I've made I think this one is my favorite.
Coconut Ice Cream (Philadelphia Style) by Cafe Johnsonia
1 can light coconut milk (I couldn't find a light one so I used regular)
1 can sweetened condensed milk
2 cups half and half or light cream (I used 1 cup heavy cream & 1 cup 2% milk)
Whisk together and chill until cold. Churn in your ice cream maker. Serve soft-serve or transfer to a plastic container and freeze until firm.
