I love those logos above, but as you probably know, my palate trumps most everything. I love Mexican casseroles, and this one is certainly no exception. I think I have to add it to my akready overcrowded blogger bookmark section!

Why yes you surely can freeze this. And I think it would freeze especially well because nothing is raw. I would say it could freeze for up to 3 months. Let it thaw on the counter for a few hours before putting it into the oven.

Thank you! I found something labeled "top rump steak" and that is in the slow cooker.

Perhaps because I did not grow up in a church, I actually like the word "casserole" and have a guilty love for the creamy 1950s versions. But this looks better.

As for a different cut of beef, you could use a beef sirloin roast. Really, any big hunk of beef that weighs 3-4 lbs. And it doesn't have to be an expensive cut because whatever it is will get very tender after being slow-cooked for so long.

I don't like the word casserole either and started using "bake" about 5 years ago. People seem to want to eat things with the word 'bake' in it. And really that is what you are doing to the whole dish.

You are so right in the fact that casseroles are fattening but they seem to be the go-to dish for those who feel the need to help a family out as well. I got loads the last time I had a baby. My hubby was happy to pass them up! I would easily take this enchilada bake any day. Absolutely delicious.
